What is the temperature rating for the 200 mph goretex bibs and jacket?

Thank you for choosing Bass Pro Shops. Most of our clothing lines do not have temperature ratings assigned due to too many external variables involved to accurately rate most garments. There are many factors involved, such as an individual's metabolic rate, overall tolerance to cold, calorie intake and weather conditions, among others. Proper layering under the garment is also a major factor in temperature tolerance.

Do the bibs have a zipper that allows the wearer to relieve himself without removing the straps?

Depends, there is a zipper that goes down the front but there is no zipper nor flap in the back. Hope this helps.
