Also, I'm not sure whether canoe length or body size is more relevant when choosing a paddle size. I'm 5'10'' and 180 lbs.

I suggest measuring from the floor to your nose to get your paddle length.

I would suggest atleast a 4ft paddle. Something shorter and you may be reaching for the water a little too often straining your back. Think about where your sitting and how far from the water you would be.
