most people I seen using drift socks, use two, is that the best way to control your boat?

A: 
People use two for two reasons. 1. To have the extra surface area to slow you down even more and 2. So you can put one on the stern and one on the bow to drift completely sideways so everyone on board can easily fish from the side.

Most fisherman chose 2 drift socks. A larger sock placed on the bow and a slightly smaller sock placed on the transom.
