I have a 135 black max with a 18.3 foot boat how much will it slow it down it trolls at 5 to 7 miles an hour will it go down to 2.5 or 3 with more gas put to it

Putting gas in the boat will not slow it down, you need the happy troller to do a job like that.

Details: 
I have a 50 hp 2 stroke merc. Should I go with the small one (up to 50hp) or the large one (50 hp and up).

The small one should be fine. If you really want to slow it way down then go with the larger one

either way, smaller one is the best fit for your moter but the larger one will let you increase the rpms and your moter will run cooler

I have a 30HP Yamaha. I would like to install a Hydrofoil to stabilize my boat and I would like to install a troller as well to slow me down when trolling. Is it possible to install both on the same motor?

you do not need to install both, when the plate is up it acts like a hydrofoil. just buy the trolling plate

I would not think so, both products go in the same location and i do not think they will overlap. The Happy Troller also requires drilling holes in the fin of the Outdrive I would go with an electric trolling motor, much better control.

It should be fine as the happy troller fits on the back end of the cavation plate behind the props. The force should not be too much at idle in gear.
