INGREDIENTS
2-3 lbs Fish Filets or Steaks
1/3 - 1/2 Cup Honey
1 Lemon
1 Lime
White Wine (optional)
Salt and Pepper to Taste
Note: this recipe tends to work best with filets that still have the skin on. Skinless filets tend to breakup on the grill and might fall through.
Directions
Lay the filets out skin side down in a shallow pan. Roll lemon and lime on countertop to free up juices inside.
Using a grater, grate some of the Lemon zest (the thin yellow part of the skin - try not to get any of the white part) into the honey and stir. The more zest you get the stronger the lemon flavor.
Cut the Lemon and Lime in half and squeeze the juice over the filets. Sprinkle the filets with white wine to taste. Salt and pepper the filets to taste. Brush the honey mixture over the filets. allow to marinate for 10-15 minutes.
While the Filets are marinating, preheat the grill and brush with oil to prevent sticking. Place the filets on the grill skin side down. Cook for 2-3 minutes, turn and cook for an additional 2-3 minutes until done (fish flakes easily with a fork).
Serve with a sprig of fresh parsley on a bed of rice.
