INGREDIENTS
1/4 pound of salted pork diced
OR
1/4 pound of bacon cut small
4 medium onions chopped
4 medium potatoes peeled and cubed
4 pounds of fish
4 tablespoons butter
1/2 cup flour
3 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon sugar
1/2 teaspoon thyme
2 quarts of milk
paprika if desired
Directions
fry salt pork or bacon until crisp
remove from fat & add onions
cook till tender
all cubed potatoes and enough water to cover
cook just till tender.(not mushy)
simmer the fish in another pan for 10 to 15 min. with just enough water to cover fish
pour liquid off into potato mixture
remove any bones or skin from fish & flake into first kettle
melt butter
blend in flour and seasonings, slowly all milk stirring until slighly thickened and smooth
cool and store in refrigerator over night or another day
remove just enough to eat
heat slowly. do not boil as boiling makes fish tough
sprinkle paorika on top of bowl if desired
if too thick add more milk........ |
