The coarse "carbide" notch quickly sharpens a dull edge. The second stage, a fine "ceramic" notch, cleans,  polishes and hones away any remaining burrs for a razor-sharp edge. The Wüsthof 2-Stage Knife Sharpener’s coarse and fine notches are pre-set to a fixed angle of 14-degrees for optimum sharpening of fillet knives, field knives, cook’s knives, paring knives, utility knives, carving knives and slicers. The Wüsthof 2-Stage Knife Sharpener also sharpens serrated and scalloped blades utilizing only the fine "ceramic" stage.
