I bought this mainly to smoke fish fillets. After firing it up I was very disappointed in the heat setting it was so hot it wanted to bake my fish. When set on low it was way to hot and the other setting were out of the question. Then I found out that when I was turning off the propane by turning it to off real slow the flame could be adjusted down to zero. By doing this I could maintain 100* or even lower. It takes some practice to get the heat where you want it. The one thing you need to do is turn up the heat to high and get the chips smoking and then turn it to your desired setting. The reason I am giving this a five star rating is it is a well built smoker has four huge racks. The only negative thing that I can say is the chip tray. I put a small mesh grate on top of the burner and used a coffee can works great.

I have purchased this smoker and then bought the suggested cover that masterbuilt sells. The cover does not fit. Contacted manufacturer and they informed me that they make covers for all their units except this one. Do not buy the 40" masterbuilt cover. How can the company not support their own products. ?????? Smoker is good.

I live in Alberta, Canada.
I tried the Masterbuilt Gas Smoker this past weekend. The outside temperature varied from -5 to -15 degrees celsius (23 to 5 degrees F). I was afraid that this would challenge the smoker to reach decent temperatures but i was surprised when it was no problem. The good news for me is i always do my smoker recipes in the winter time and many electric
smokers just do not have the BTU's.
This one was fine. My main gripe that prevents me from giving this product 5 stars is:
1) There is only four chrome racks for meat, etc.
I make jerky and could have used as many as seven so I fabricated something of my own.
This is not a huge deal as one can smoke several batches, but this takes more time and propane.
There would need to be additional holes in the frame to accommodate additional food racks as well.
2) the wood chip pan is just not my idea of an ideal pan. there are holes in the bottom that allow ash and chips to spill out. I will modify this in the future as it is a robust metal tray with legs.
The good: Easy assembly, all metal construction,
good thermostat in the door for checking temperature from afar. Good handle, good controls and good clasp for the door.
When i am finished modifying this smoker,
it will be a five star product. My only worry is the burner may not last as long as the rest of the unit which may cause replacement problems down the road.
Should you buy this? I say yes. Very fast shipping too!
