Very stable temps and excellent on the propane. To make life a little easier, ditch the water pan and get a full sized stainless steel catering pan at a store such as Smart and Final or other restaurant supply store. It will fit on the bottom rack and catch most if not all drippings before it hits the bottom of the smoker. Yes you will lose one of your racks, but I can still smoke 4 to 6 pork butts in this thing without the bottom rack.
As stated in previous posts, the wood chip pan is a joke. I use a 12"inch cast iron pan that sits directly on top of the wood chip pan with no problems. My fist sized chunks of pecan used to catch fire, but with the cast iron pan on top of the wood chip pan, this is not an issue anymore.
Yes, there is a slight gap in the door, but it does not affect my temperature in a noticeable way. Don't hesitate buying this thing. With the 2 simple mods, the smoker is almost bullet proof. I won't go back to my drum smoker anymore!

Received my smoker on June 10th, only took 2 days to ship and receive(VERY Happy).#1 Assembly only took me approx 45 min or so....Very easy to assembly. #2 it fired right up when I lit it....seasoned it for a few hours the night before....#3 have had 2 slabs of pork spare ribs and 5 lbs of chicken marinating over night......everything went exactly like I expected....started my soaked mesquite wood chips first got my chips smoking and put my meat on.....had to fill up the water pan a few times throughout the my smoke but it is tolerable...(wish pan was a little deeper. I did not have any issues or problems with this smokers it performed just like I wanted.....I did not have any food left! Read all the reviews.......it does help giving u pointers on little adjustments to make this smoker perform great! Next time I cook on this smoker I will have pictures to share.

The only thing bad about this unit is that they didn't include operating instructions....like others suggested, I also reccomend putting your wood into a cast iron pan on top of the burner...way less mess and more smoke. Also, if you want to get the heat down to 200 degrees turn the smoker all the way down then start turning down the gas on the tank valve to the desired temp...happy smokin'!

I have been smoking food for about 15 years. I had an electric smoker and I loved it after I made some modifications. The only problem it was too small.
I received the large Masterbuilt as a gift. I made only one modification before I even used it. The door has a gap around it. I purchase some Fire place rope and used the hi heat silicone and to a fix it around the door. Season all smokers before using them.
This will keep a stable temp and use much less gas when cooking.
Overall this smoker is the king for the backyard smoker at the price you can't beat. When I smoke I tend to over do it. I put lots of food in and usually smoke all day, and freeze what I can't eat for another day. The smoker produces professional results every time. I get a crispy crust completely around when its desired.
I would recommend this to anyone and the small one for beginners.
