I have used the Lansky Diamond Sharpening System for over 15 years. I have knives of high quality steel and stainless steel. It sharpens fixed and folding knives. The edge is shaving sharp with the fine diamond hone as the final step. The diamond hones do not lose their flat surface from wear like the stone hones and they last for years. Make sure you place the clamp in the exact same position for each sharpening. I draw a diagram on a piece of paper of the clamp position for each knife. I have some other sharpening systems and the Lansky Diamond is by far the best. Don't worry about the price, the Diamond System is well worth the money. Mickey H.
