Have had the jerky board for over 10 years and love it. Knife is still VERY sharp.
The incert boards are to help keep smaller pieces of meat even. There should be 2, one for each thickness of the board. Place them on the board beside you meat. It gives you a firmer surface to slide the knife along. It will also help you avoid curled meat.

Makes slicing easy
Bought this and the Jerky Cannon, used the cannon with ground beef - that worked great, decided to get brace and try muscle meat - I used a top loin roast, froze it a lttle bit - and then sliced.
The slicing board makes it a breeze to get nice even slices, but definately partially freeze the meat first so it doesn't 'curl up on you' as you slice it.
Not sure how to use the insert it comes with which I guess it for slicing vegatables or what not - it could have come with instructions for that.
