Turned out great!!! Actually had comments that it was best summer sausage they ever had!!! Good kick but not over the top, doesn't burn mouth. Instructions are easy to follow. We followed meat ratios to the letter. We changed temps 20deg higher to finish things in about 4hrs.

I could get 9 of the 3 pound tubes in my Smoky Mountain Smoker and they turned out AWESOME. Took some to work for the crews and they are still wanting me to bring more back.
