A great gift for any kitchen
I hunt and fish a lot. Prior to purchasing the Chef's Choice Model 120, I spent entirely too much time sharpening knives. The first station puts an edge on the knife at the right angle. Once you get a good edge on the knife, which doesn't take long, you polish the edge with the last slot. A couple of passes on each edge and your are finished. You can shave with it. If it gets dull, you just dress it up with the polishing wheel. It is nice to have a tool that works like it is supposed to.

So far this has been a great buy,always had trouble sharping knives with stones before,getting the right angle this takes care of that and putes areally good edge on hunting knifes down to pocket knifes.

In the lick of time
My husband and son were having difficulty getting their knives sharp enough to effectively skin the deer that were being brought into our camp. The Chef's Choice sharpener saved the day. It was supposed to be a Christmas present but I figured they needed it now instead of when hunting season was almost over. Great product.

Fantastic Knife Sharpener
I have always used hand stones or my Lansky to sharpen knives. Now, I have put them on the shelves, the Chef's Choice is the best knife sharpener I have ever used. Great on all the house hold knives, but , the main reason I purchased this item is for my hunting and fishing knives to keep them to a razor edge.The last thing I want is to go hunting deer and at the last instant to find my knife dull, now it is less time consuming and I get a more defined edge..I would tell any hunter , if you want you knives to have a perfect sharp edge every time .....Buy The Chef's Choice !!!!!!

I have a model 130 and am totally satisfied with it. It is not have magnets to hold the blade in place. There are slots that you drag the blade through that hold the blade at the proper angle. Once you get an edge on the blade with the rough wheel, a couple of passes on the polishing wheel finishes the sharpening process. If your knife gets dull, you can usually hit it a couple of times with the polishing wheel.
I am not sure about the 510 but the 120 is awesome. It has 3 stages with a ploishing stage last and has spring guides instead of magnet guides. I sharpened a small 11/2" blade pocket knife to where it will shave the hair off your arm.
