I have been using my BBQ Smoker for ten years and it is excellent for smoking any meat. However, the water pan (which it just above the coals/hjigh heat) tend to "burn out" (burns holes in pan) after about a year. Finding replacement pans has become very difficult and I found them recently at Bass Pro Shops (online). The pans burn out because they are of thin steel material which cannot stand-up to the high heat repeatedly for more than a year. Wish they would make them out of stainless steel. However, they are worth the effort because they keep the meat from becoming too dry while cooking.
