Used the smoker once worked well. However when I took it out of the box the back of my 'almost ' $600.00 smoker was smashed...usable but smashed with no physical damage on the box. Plus would have liked Bradley to include cold smoke cheese recipes.

Please do your research before you buy this product. Check out the Bradley forums and learn about the endless problems of these poorly build units. In less than a year I along with many many others have had multiple warranty issues. I have gone through 3 heater elements a door and all the hinges. The hinges are all plastic and WILL Break. Supposedly they have fixed the heater element problem but I have already had one of the new ones fail. So Please be prepared for problems when you buy this unit.

I've been smoking with a WSM for several years; a great product but it requires a good bit of tending and is not the easiest to clean. I recently heard about the Bradley Digital, and after reading several reviews, decided to get it for my birthday (Thanks, Honey!) I was able to get 7 hours smoke on a pork belly for bacon; whereas in the WSM, it was done after 3 hours. And all I had to do was tend the drip bowl! Just smoked a brisket for 17 hours, adding some baby back ribs and brined almonds towards the end for July 4th. Huge success and so easy. Found a metal roasting pan that just fits and can sub for the drip bowl so I can get at least 6 hours sleep safely on a long smoke. The racks, etc. get a quick scrub in the sink, then (and this is the best part) go in the dishwasher! My husband says I'm cheating now, but added we should have something smoked at least once a week.

Yes, you can make summer sausage in this smoker.Directions: http://www.bradleysmoker.com/recipe...
1. Stuff mixture into 2.5-inch casings the length of the racks.
2. Dried sausage at 100°F for an hour.
3. Start the smoke and increase temperature to 130°F for one hour.
4. Next increase temperature to 150°F for the next hour.
5. Final temperature adjustment is 170F for 5 hours or to the sausages internal temperature of 152°F.

The side box has a temp probe on it that will tell you what the internal temp. It shows the set point and the actual temp.1 of 1
