Every time I make this I get rave reviews. My boys never agree on anything they like, but they both like this...so does my own mom.
Whips up in no time and can stay warm on the stove for however long you need.
One recommendation is to use leftover roasted chicken or turkey instead of ground. Flavor and texture are both better. Usually, I'll do an oven stuffer roaster one night then pick it clean for this soup later in the week. Also, great for using up Thanksgiving/Christmas leftover turkey.

Bass Pro Shops® Uncle Buck's® Tortilla Soup Mix: 4oz Cooking Instructions - Step 1: Brown 1lb ground beef or turkey and set aside. Pour contents of bag into kettle. Add 1-2/3 cups of water into mix along with (2) 14-1/2oz cans of chicken broth and one 15oz can of tomato sauce. Add Meat and boil slowly for 30 minutes covered. Step 2: Tear three corn tortillas into pieces and add to soup along with ½ cup grated cheddar cheese. Simmer for 10-15 minutes and serve. Helpful Hints: If ingredients do not flow freely from bottle, use an ice pick or knife to loosen. For a great vegetarian-style soup leave out the ground turkey. For a Low-Fat version, omit the grated cheese. Ingredients: Tomato, Corn, Bell Pepper, Minced Onion, Salt, Spices (salt, cumin, garlic powder, chili powder), and Jalapeno Pepper.A:Â
