Sure to spice up any backpacker's menu, Huevos Rancheros is Backpacker's Pantry take on the delicious, spicy egg dish mixed with red beans, green chiles, red bell peppers, cheddar cheese and onions. Each package makes two 5-oz. servings. To prepare, add 1-1/4 cups of water. Blend well. Let stand for 10 minutes to allow eggs to rehydrate. Blend again. Cook over low heat in a nonstick pan.
