Speckled finish trays work with Open Country's patented Converga-Flow® design for equal distribution of pressurized heat throughout the dehydrator for fast, even drying without rotating the trays. Manual states that you can have 12. I currently use it with 8 and haven't noticed a big difference in the amount of time it takes to dehydrate jerky using more than the 4 trays that came with the unit.
