Should the smoker be "cleaned" or just wiped down? I've seen both answers: One is using an Oven Cleaner, the other just wipe grime near door. This smoker is new to me; I used to use a Webber Grill to smoke. Webber is gone, Masterbuilt is new.

A:
I usually just wipe it down until it get too dirty of if i do big greasy meals then i bust out the Oven Cleaner.

The inside parts like the rack and the pan I just toss in the dishwasher.

A:
I unplug mine, spray it with a degreasor and rinse it down. Leave the door open to let it dry inside and you are ready to go again.

On the ground or not?

Details:
When you use the smoker should it be on the ground or can it be elevated such as on cinder blocks or a table that is safe?

Answers

A:
I placed mine on concrete blocks as it is easier for my old carcass to access the inside of smoker. Works well. Friend put his on folding table and seems to be stable, but difficult to use digital control up so high.

You can elevate it, butwatch the drip tray in the back. If it falls off you would have liquid ick get all over the place.

I do not know what you mean by SPECIAL wood chips. I use wood chips that are sold at my local hardware store. Applewood, Hickory etc.

problem probably is not the heating element but the terminals connected to the heating element have coroded an broke. i had the same issue, i removed the back panel by knocking out the ribets with a chisel. replaced with higher grade terminals put back together with sheet metal screws and it works fine ever since.

Bought one 2 yrs ago and locking latch broke first time I closed door-thus returned item. Appeared to be a very cheaply made latch.
Wondering if there has been an upgrade in this part.

A:
I have been looking around my local stores for a smoker. Idid not purchase any due to the metal being so flimsy. These smokers were not masterbuilt brand. I just had my masterbuilt delivered a couple weeks ago. For the extra 50 dollars I paid I am quite pleased art the quality and the thickness of the metal. This smoker should last me a life time from the looks of it. The latch is extremely strong and is also adjustable if need be.

A:
Following the instructions, I open the vent for lightly smoking fish and again when finishing off smoking venison summer sausage. Primarily for just plain smoking pork, beef, chicken, etc., I prefer to leave the vent closed along with the chip tray closed for max smoke and minimum heat loss, and using less wood chips. Seems to work well for me. Use it normally 3 - 4 times weekly, even when it is cold here in the FL panhandle . . . . . . yes it does get to or below freezing quite often. Tonight it is 32 degrees.

I adjust it for how much smoked flavor I want on my food, if you want the most flavor then keep the vent closed, open it for less smoke taste.

I open mine. I have found that too much smoke and the meat will turn out bitter. I keep the smoke moving across the smoker and only use one tray of woodchips no matter how long I cook for. However my smoker is seasoned very well.
