I fish in St. Lawrence River in Canada and believe me, there's a lot of wind there and also swift current. The 3 oz works fine for me and go down fast.

I would actually recommend the no-roll sinker for the application you mention. the problem with the disk sinkers is that when fishing with larger baits (cut bait, chicken liver,etc.) the current moves the bait around, which in turn lifts the sink up on end which allows the current to push it downstream too.
