If it's one we are keeping we hook the gill slit, usually weigh those after fishing. If we are releasing we put the fish in a lite weight bag.

Yeah or you can try to get the hook to grip up under his lower jaw. Either way you won't hurt the fish (that much).

The best way, that I know of, to weigh the fish is to pop the hook through the mouth. Many anglers make the mistake when weighing fish or putting them on the stringer of putting it through the gills. Weighing it through the mouth puts less stress on the fish and has a better chance of survival when released. The hole that you make through the mouth will eventually close shut.
