Adjustable safety brackets.

Details: 
It states it has adjustable safety brackets. How adjustable are they? Do they slide down so that I can use my skillet? or other pots that are larger in diameter.

Your skillet will probably work at the lowest setting for the brackets, but with a skillet there is no "tip over" danger, so you can just as easily remove the brackets.
To use a bigger diameter pot, you will have to remover the safety brackets.

the max size tureky recommended for any 30 qt. fryer is 18 lbs. If you want to cook a bigger turkey than this, you have to go to Bass Pro's 36 qt. fryer.

In the Owner's manual the WARNING list, this appliance is not intended to be installed in or on recreational vehicles. Use appliance only with propane regulator/ valve assembly supplied with the unit. Technical Questions call 1-888-837-1380.

20 mins with timer. UNlimited if you do the blog suggested thing and duct tape it at about 10 mins.

Cycle time for timer is around 20 minutes. If the timer is not reset within around 20 minutes, the burner will shut OFF automatically. If this occurs, please follow lighting instructions and continue to cook.

I ask because if you use the steamer insert that comes with this and put the steamer basket on top of it inside the pot and then add water right to the bottom of the steamer basket, you cannot put the lid on top of the pot.

I recommend the Stainless. It is a little stronger, and keeps the heat better when placing the turkey in the fryer.

I can tell you I own both aluminum and stainless steel. I never use the aluminum because of the ease of cleaning the stainless steel. I use the stainless steel quite often and its holding up with no issues. If you get the stainless steel, you will not be disappointed. If you get the aluminum, you'll regret it. There is no difference between the two as far as I'm concerned other than cleaning. Bottom line, you get what you pay for.
